{RECIPE} Baked Blueberry Lemon Glazed Mini Doughnuts

Ingredients
  • ¼ cup Nestlé GOOD HOST Lemon Iced Tea Powder
  • ¼ cup Butter, Melted
  • ¼ cup Canola Oil
  • ½ cup Granulated Sugar
  • 2 Large Eggs
  • 2 tsp Vanilla Extract
  • 1 tsp Lemon Zest, Grated
  • 1 cup Milk
  • 2⅔ cups All-Purpose Flour
  • 1½ tsp Baking Powder
  • ¼ tsp Baking Soda
  • ½ tsp Salt
  • 1 cup Blueberries
Glaze
  • 1 tsp Nestlé GOOD HOST Lemon Iced Tea Powder
  • 1 cup Powdered Sugar
  • 1 tsp Lemon Zest, Grated
  • 8 Tbsp Fresh Squeezed Lemon Juice
Instructions
  1. Preheat oven to 425 degrees and grease your doughnut pan or doughnut maker
  2. In a large bowl, combine butter, oil, sugar, and Nestlé GOOD HOST Lemon Iced Tea Powder and whisk for 2 minutes, or until smooth
  3. Add eggs, vanilla, lemon zest and milk to butter mixture and whisk until smooth
  4. Add flour, baking powder, baking soda and salt, and mix just until combined, do not over mix.
  5. Stir in blueberries. Batter will be thick, but that is totally ok
  6. Spoon batter into a piping bag or large freezer bag and cut off the end of the bag so the opening wide enough for the blueberries to fit through.
  7. Pipe batter around each doughnut cavity allowing room for the doughnuts to rise during cooking.
  8. Bake for 8 minutes until doughnuts start to turn golden brown. Check for doneness with a toothpick.
  9. Remove doughnuts from pan and let cool for 10 minutes on a wire rack before glazing.
Prepare the glaze:
  1. In a small shallow bowl, combine sugar, Nestlé GOOD HOST Lemon Iced Tea Powder, lemon zest, and lemon juice. Mix until well combined.
  2. When doughnuts have cooled completely, dip tops of doughnuts into the glaze and flip over allowing the glaze to run down the sides of the doughnut. Set on wire rack until glaze has dried.
