Chocolate Quinoa Energy Balls

  • 5 Tbsp NESQUIK Chocolate Powder
  • 2 cups Rolled Oats
  • ⅓ cup Quinoa
  • 1 Tbsp Chia Seeds
  • 2 Tbsp Ground Flax
  • 1 ripe banana, mashed
  • 3 Tbsp Honey
  • 1 Tbsp Vanilla
  • ⅓ cup Peanut Butter
  • ⅓ cup Mini Chocolate Chips
  1. Preheat oven to 350 degrees
  2. Rinse quinoa in a sieve under cold water and shake/drip dry
  3. Spread oats and quinoa evenly on two cookie sheets and bake for 10 - 15 minutes or until fragrant and beginning to turn golden
  4. Add all ingredients to a large bowl and mix with a spatula or spoon until combined
  5. Using a small cookie scoop and your hands, roll into 20 equal-sized balls. You may have to gently squeeze to get the balls to stick together
  6. Store in an airtight container in the fridge for up to two weeks
