{MAKE IT} Quinoa, Black Bean & Lentil Veggie Burgers #MeatlessMonday
- 1 cup cooked quinoa
- 1 cup lentils
- ½ cup black beans
- ½ cup corn
- ½ onion, diced
- ½ cup Panko Bread Crumbs
- ¼ cup BBQ Sauce
- 1 Egg
- 2 Tbsps fresh parsley, chopped
- 2 cloves garlic, minced
- 1 Tsp smoked paprika
- 1 Tsp oregano
- 1 Tsp chili powder
- 1 Tbsp Nutiva Virgin Coconut Oil
- Saute garlic and onions in coconut oil until translucent
- Combine all ingredients in a medium bowl and mix well (I used my hands, much as you would if you were making meatloaf)
- Form medium/large sized balls and pat them down to form a patty shape, aprox ½ inch thick
- Fry on medium heat in a pan or on a flat grill with a little coconut oil until browned on both sides.
- Enjoy while hot, or let cool and freeze between parchment or wax paper
To make this a truly vegetarian/vegan dish, sub oil in place of the egg
