{MAKE IT} Quinoa, Black Bean & Lentil Veggie Burgers #MeatlessMonday
 
 
Serves: 6 patties
Ingredients
  • 1 cup cooked quinoa
  • 1 cup lentils
  • ½ cup black beans
  • ½ cup corn
  • ½ onion, diced
  • ½ cup Panko Bread Crumbs
  • ¼ cup BBQ Sauce
  • 1 Egg
  • 2 Tbsps fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 Tsp smoked paprika
  • 1 Tsp oregano
  • 1 Tsp chili powder
  • 1 Tbsp Nutiva Virgin Coconut Oil
Instructions
  1. Saute garlic and onions in coconut oil until translucent
  2. Combine all ingredients in a medium bowl and mix well (I used my hands, much as you would if you were making meatloaf)
  3. Form medium/large sized balls and pat them down to form a patty shape, aprox ½ inch thick
  4. Fry on medium heat in a pan or on a flat grill with a little coconut oil until browned on both sides.
  5. Enjoy while hot, or let cool and freeze between parchment or wax paper
Notes
To make this a truly vegetarian/vegan dish, sub oil in place of the egg
