If you’re on Pinterest, then you’ve very likely seen these bad boys popping up lately. I’ve had them on my “must make soon” list (which happens to be so long I could likely make a new recipe every day for the next 10 years and never have a duplicate!), and the kids have been hounding me for corn dogs (pardon the pun!) so I figured now was as good a time as any.
I’ve mentioned before, I strongly believe that everything is better in mini form, and as a result I have a bit of an obsession with all things little, Mini Nachos, Mini Zucchini Bites, Mini Pizza Rolls, and now mini corn dogs! These are so quick and easy and are sure to be a hit in your house, and lunch box!
Ingredients:
- 1 3/4 cup cornmeal
- 3/4 cup all purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/4 cup honey
- 1 1/2 cup buttermilk
- 1/4 cup vegetable oil (or apple sauce)
- 2 large eggs
- 3-5 hot dogs/cocktail wieners (or Vyes Veggie dogs)
Directions:
- Preheat oven to 425°
- Mix all dry ingredients in a medium bowl
- In a large bowl, mix together all the wet ingredients
- Gradually pour dry ingredients into wet ingredients while mixing well
- Scoop aprox. 1 Tbsp of cornbread mixture into each mini muffin cup. The batter should come just below the top of the muffin cup (aprox. 5mm) so that when you put your dog in the batter it’s almost fully covered.
- Cut your dogs into small pieces (I used halved cocktail wieners and cut them in half, they were slightly less than an inch long) and stick into the center of each muffin cup. Don’t worry if your wiener stick out a little, and don’t worry if it’s fully covered
- Bake for 8 – 10 minutes depending on your oven. Watch for the tops to be golden yellow/brown.
note: To simplify this recipe, use a boxed cornbread mix. Prepare according to package directions and then follow along from step 5.
These freeze really well (which I would recommend as this recipe made a small army of mini corn dogs!) and are great for tossing into a lunch box in a pinch when you’re low on time, or quickly heating for an afternoon snack.
Serve with ketchup and/or mustard end enjoy! You wont be disappointed with this quick and easy snack!
