Nathan’s favorite guy in the whole entire world is his “Ellie”, a stuffed elephant that I received from good friend of mine for my baby shower waaay back in 2008. It was love at first sight, and the two of them have been inseparable ever since… Well, we did have a close call when we lost him in the Seattle airport en route to Mexico. Thankfully, quick thinking mamma was fully prepared for disaster and had filled out a baggage claim tag and stuck it to old Ellie’s tail prior to him being misplaced. The great people at the Seattle airport had stuffed little Ellie in a mailer and had him wisked away via USPS to be waiting in our mailbox upon our return! Phew!
Anyways, planning ahead, I just KNEW that today’s would be “E” for Elephant (the fact that my new Lunch Punch Animal Shape Sandwich Cutters just arrived helped the cause as well!).
A simple lunch consisting of a ham and cheese elephant shaped sammie, veggie chips, peaches, cucumber, yogurt, and edamame beans is sure to please today!
