Every once in a while I like to impress the pants off my family make meal time special by actually giving a shit putting in a little extra effort. This was one of those nights! I’ve seen these taco bowls on Pinterest lately and decided to give them a try.
Unfortunately (fortunately?) I only had large tortilla’s so shaping them in an upside down muffin pan, as some of the tutorials instruct, was out of the question. I rifled through my endless kitchen gadgets cupboards and couldn’t find anything that would work, so I decided to cross my fingers that my new bowls were oven friendly, and hope for the best!
Process was pretty simple:
- Preheat oven to 400
- Stuff the tortilla into the bowl forming as much of a bowl shape as possible
- Spray/brush with oil (I used coconut oil)
- Sprinkle with salt (optional)
- Bake in the over for 5-10 minutes watching closely (these buggers will burn QUICK so keep a good eye on them)
Remove the tortillas from the bowls, however leave them in the bowls to cool. One of the downfall’s of baking these is that they don’t evenly cook, however the bowls held their shape no problem for us so I’d definitely do it this way again (until I find a better method!)
Prepare your stirfry while your bowls are cooling.
Take out your tortilla bowl, place it on a plate and fill with rice, meat of your choice (mine had tofu but the rest of the fam had chicken), and stir-fried veggies, and enjoy!
YUM!! This was a super delicious, and super fast, fun twist on one of our favorite family meals. The biggest kid was begging me to send a tortilla bowl with him to daycare, but being as I only made one extra, it had Momma’s lunch written all over it!
**note: no ceramic bowls were harmed in the making of this recipe!**
