I was recently invited to be a blogger for the Love Your Local Safeway campaign, and being the good vegetarian that I am, I jumped at the opportunity! I’m a huge Safeway fan, in fact, I fondly recall pushing the mini shopping cart up and down the aisles with my Mom when I was a kid. I’m also a huge lover of beef… Well, my family loves it, and I love everything about it aside from the actual eating of it part, so this was naturally a match made in vegetarian beef loving heaven!
I absolutely love the versatility of beef. It makes a great addition to so many different meals, and the variety of cuts means that I can create a good selection of meals with beef and it doesn’t seem like we’re eating the same thing every night.
I particularly love ground beef because it’s vegetarian proof! Very hard to screw up, cooks quickly, and everybody now, it’s versatile! It’s also very cost effective and can be stored in the freezer for up to 3 months. How awesome is that?!
This recipe is simple and I assure you you’re gonna want to try it out for yourself!
What you need:

Ground (Canadian) Beef
-
Quail Eggs (hard boiled and peeled)
-
1 Chicken Egg
-
Grated Cheese (1/2 cup to 1 cup)
-
1/4 cup Diced Onion
-
Box of Suffing mix
-
Ketchup
-
Worcestershire sauce
-
HP Sauce
-
Pepper
What you need to do:

Mix everything (excluding the quail eggs) in a mixing bowl. Note that I’ve now given you my secret meatloaf/beat ball recipe… Yes, throw a box of stuffing mix into meat and voila! Awesomeness!

Place all your meatballs in an oven friendly dish (I used pyrex) and bake at 350 until done (15 minutes or so).
I served these over pasta for dinner, and then on their own in the kids lunches the next day.
Seriously… How easy is that? And you get a super cute protein packed meatball with a surprise middle! My family loved them and I’m sure yours will too!
