As part of the challenge, Hidden Valley Ranch sent me three bottles of ranch dressing to “Ranchify” a recipe and with my love of spicy stuff, I knew right away the bottle of spicy would be in the recipe!
Super exciting, however aside from wanting my recipe to be spicy, I had no idea what I was going to make. After scouring my cupboards and local grocery store I decided on a shrimp and veggie pasta bake! The farm market shelves are filled with colorful veggies right now, and my house is almost always stocked with fresh caught prawns from my parents, I knew I couldn’t go wrong with this recipe!
Ingredients:
- 1 – 700g package Olivieri Tortellini with Three Cheese
- 1 medium carrot – Shredded
- 1/2 zucchini – diced
- 1 small florette of cauliflour
- 1 small florette of broccoli
- 1/2 onion – diced
- 2 cloves of garlic – finely chopped
- 1/2 cup Veggie Broth
- 1 Tbsp butter or coconut oil
- 1 8oz package cream cheese – cubed & softened
- 1 cup milk
- 2 tsps flour
- 1/2 cup asiago cheese – grated
- 1/2 cup parmesan cheese – grated
- 1/4 Panko bread crumbs
- 10-12 shrimp/prawns
- 1 tsp oregano
- 1 tsp smoked paprika
- 1 tsp pepper
- 1 cup Hidden Valley Ranch – Spicy
Instructions:
- Cook tortellini according to package instructions, drain and set aside
- In a large pan, add butter/coconut oil and all veggies including garlic, saute for 5 minutes, add in veggie broth and shrimp/prawns and cook until pink. Remove from pan and set aside.
- In large pan, combine milk, flour, and spices on low-med heat until thick and bubbly, add in cream cheese and asiago cheese and stir until smooth. Remove from heat and add in ranch dressing. Combine pasta, veggie/prawn mixture, and sauce, until all coated. Turn into an ungreased shallow 3 quart casserole dish.
- Sprinkle parmesan cheese and panko bread crumbs evenly over top of dish.
- Bake uncovered in 350 degree over for 15-20 minutes or until cheese is melted and bubbly.
