Getting back to our thematic unit brings us to the letter N. The thought of making a Narwal crossed my mind on a few different occasions, however I settled with Nachos. Mini nachos! I saw this somewhere in the land of pinterest some time ago and have been wanting to replicate it ever since! The nachos sit on a bed of leftover rice and are made of Tostito’s SCOOPS chips (I went with the whole grain variety), Yves veggie ground round (didn’t feel like cooking ground beef after making dinner!), and topped with cheese. These would be fantastic to serve as an appie at a party as finger food, however I’d probably toss them in the oven to melt the cheese prior to serving. Salsa and sour cream in our EasyLunchBoxes Mini Dippers. For snacks the kids have apple slices and raisins, and a Chobani greek yogurt! Mmmm!
