Can you spot the taco?!
Having three carnivores and one vegetarian in the house makes for LOTS of left overs on taco nights! One of the great things about plain old ground beef is that it’s one of the few leftovers hubby will eat, and one of the easiest things (I think) to transform into another meal.
If you haven’t spotted it yet, the taco is all wrapped up in a cute little lettuce cocoon! I was inspired to try out lettuce wraps after a friend did the Whole30 challenge and served this to her family (her two kids are similar in age to my kids). Now, I’m not going to claim that my lettuce wrapped taco is anywhere near anything that’s in the Whole30 challenge, but it will still be delish! The kids have slightly different lunches today as the smallest kid has all of a sudden discovered that she likes tomatoes like her mom so I stuffed some in there, and the boy child is much like his father and is repulsed by them. The boy child also got pineapple chunks where as Madison got grapes. I’m not going to lay claim to her dislike of pineapple as coming from me though, I don’t understand how one could not like pineapple… Mmmmmmm…. Anyways… The kids also got a side of taco chips, mango salsa and sour cream in the cute new silicone molds I picked up at my local dollar store today (SWEET!)
