I love the holidays, but as a vegetarian, I don’t have the same appreciation for the joys of endless turkey leftovers that most carnivores have. It’s often a challenge to “re-purpose” turkey in a kid friendly way… Turkey sammies only go so far.
I decided to try something a little different this Thanksgiving and turn our turkey leftovers into individual Leftover Turkey Pot Pie! Not only are these the perfect size for kids, but they can be completely created with Thanksgiving or other holiday leftovers!
Clear out the fridge in one swoop and your family is sure to do the same with their plates.
{MAKE IT} Leftover Turkey Pot Pies
Ingredients
- 2 turkey breasts - cooked and chopped (aprox. 1-2 cups cooked turkey)
- 1 cup mixed peas and carrots
- 2 small potatoes - cooked and cubed
- 1 cup Antonella's Alfredo Sauce
- ¼ cup vegetable broth
- ¼ cup onion - chopped
- 1 celery stalk - chopped
- 1 Tbsp butter
- 2 Tbsps Bisto gravy mix
- 1 clove garlic
- Puff pastry
- Pepper and seasonings to taste
Instructions
- Preheat oven to 400 degrees
- Pan fry onion, celery, garlic and butter until translucent
- Mix all ingredients in a medium bowl until combined
- Spoon mixture into personal sized ramekins
- Top with puff pastry square large enough to cover top of ramekin
- Bake until tops of puff pastry are golden brown and puffy (aprox. 10 minutes)
Notes
I spiced the pot pies up with a italian seasoning, smoked paprika, seasoning salt, and pepper, however feel free to use whatever seasonings you like. Chicken or salmon can also be substituted for the turkey.
