Today is a very special day for me. I’ve had the pleasure of guest posting over at NeverSeconds. If you haven’t checked out this blog yet, do it tout suite! The blog was created by an amazing young lady from Scotland who goes by VEG (Veritas Ex Gustu, which means “truth from tasting” in Latin). VEG is wise beyond her years and very creative and witty (ahem… Much like myself!). VEG started blogging her school lunches back in April 2012, and her blog went viral almost instantly. Her blogging days were cut seemingly short not long after she got started as a result of her school council banning VEG from taking photos of her lunches. A short time later however, this was over turned and all was again right with the world (you can read about it HERE.
You might question why a 9 year old girl blogging about her lunches is newsworthy. Well, aside from the fact that this young lady is super funny and writes amazingly well, there’s a phenominal philanthropic motive behind her blog. She’s also on a mission to collect money for an amazing organization called Mary’s Meals which “is a global movement that sets up school feeding projects in some of the world’s poorest communities, where hunger and poverty prevent children from gaining an education” Please, take a moment to go check out this amazing organization that VEG and her supporters have done so much for. With an original goal of raising £7,000.00 her current contributions are sitting at £112,308.86. That’s absolutely amazing if you ask me!! If you’re interested in donating head over to JustGiving to donate. It costs roughly $16 (CAD or USD) to feed a child for a whole YEAR!! That’s nuts if you ask me! The proceeds from all the donations are currently building the “Friends of NeverSeconds” kitchen in Malawi! Absolutely amazing if you ask me! VEG will be visiting it in a few months which I’m sure will be an excellent experience that I’m excited to read all about!

Glad you found my blog! This cheesy mac was a pared down version of another recipe that I use, but takes a little longer. All I did was cook some pasta as directed in the instructions, drain the water and put it back in the pot used for cooking. Turn the heat on low and add in milk, and cheese scraps to taste. Because this was on a whim, I just estimated the quantities needed. I also added about a Tbsp on butter, and some cream cheese (a couple Tbsps maybe), pepper, cajun spice, and some smoked paprika (I seriously put it on almost everything!)
