I recently made Parmesan Cruisted Tilapia for my family and as a result of it’s resounding success, I decided to to tweak the recipe a bit and apply it to chicken. Again, a huge hit!
Now, if you may be wondering how you’ll like this, even if you don’t like chicken, the answer is simple. This recipe is great for chicken or fish! Seriously great! I will definitely be testing it out on other meats, and meat alternatives in the future!
- 4 boneless, skinless, chicken breasts (I used 2 chicken breasts and butterflied them)
- 1/2 lemon (or aprox 2 Tbsps)
- 1/2 cup grated parmesan cheese
- 1/4 cup Hellman’s mayonnaise
- 1/4 cup plain greek yogurt
- 1 clove of minced garlic
- 1/4 teaspoon Italian seasoning
- 4 Tbsp bread crumbs (I used Panko because it’s awesome!)
- Pepper to taste
- Smoked paprika to taste (I put this sh*t on everything!)
Directions:
- Preheat oven to 425 degrees.
- Line a cookie sheet with parchment paper
- In a small bowl, mix greek yogurt, mayo, lemon, garlic, seasonings, and cheese
- Lay your breasts on the parchment lined cookie sheet (get your mind out of the gutter!)
- Smother your breasts… your chicken breasts, with the cheese mixture and top evenly with bread crumbs
- Put cookie sheet on middle oven rack and cook for 20 minutes or until done
- Once chicken is done, move to the top rack of the oven and switch to broil until the top of the chicken is nice and golden.
- Remove from the oven and enjoy! Mmmmm
