This homemade Quinoa, Black Bean & Lentil Veggie Burger packs a punch in the nutrient department with a host of rich, super food ingredients. This recipe is both quick and easy to make, and it becomes infinitely versatile by adding, subtracting, or omitting veggies (or even proteins) as you please.
Make and eat these right away, or individually freeze and enjoy later. Either way, these will be a staple on your grilling menu.
Top this veggie burger with lettuce, tomato, and avocado to round out this nutrient rich and flavourful meal. Looking to cut the extra calories and fat from added condiments? Mix 1 Tbsp of Greek yogurt with half an avocado, a squeeze of lime juice and a pinch of pepper and smoked paprika and you’re set! If calories aren’t a concern for you, pile on the shredded cheese, and sauteed mushrooms.
{MAKE IT} Quinoa, Black Bean & Lentil Veggie Burgers #MeatlessMonday
Serves: 6 patties
Ingredients
- 1 cup cooked quinoa
- 1 cup lentils
- ½ cup black beans
- ½ cup corn
- ½ onion, diced
- ½ cup Panko Bread Crumbs
- ¼ cup BBQ Sauce
- 1 Egg
- 2 Tbsps fresh parsley, chopped
- 2 cloves garlic, minced
- 1 Tsp smoked paprika
- 1 Tsp oregano
- 1 Tsp chili powder
- 1 Tbsp Nutiva Virgin Coconut Oil
Instructions
- Saute garlic and onions in coconut oil until translucent
- Combine all ingredients in a medium bowl and mix well (I used my hands, much as you would if you were making meatloaf)
- Form medium/large sized balls and pat them down to form a patty shape, aprox ½ inch thick
- Fry on medium heat in a pan or on a flat grill with a little coconut oil until browned on both sides.
- Enjoy while hot, or let cool and freeze between parchment or wax paper
Notes
To make this a truly vegetarian/vegan dish, sub oil in place of the egg
