If you’ve read my blog before, you’ll know that the waffle-wich is a popular one in our house. The biggest kid is a HUGE breakfast fan and has been known to gobble up 10 medium sized pancakes in one sitting!
Seriously.
He’s a kid after my own heart and truely LOVES breakfast food!
Naturally then, W had to be for Waffle. Luck would have it too, that there were 2 waffles left in the freezer. One day I will get a waffle maker. I have to wait until the kids are older though as the day I bring another kitchen gadget into the house is the day Mr.MoreThanYourAverageMom will surely leave me, and I’m not prepared to single parent yet, so alas… Toaster waffles it is!
Today’s lunch consists of a waffle-wich with jam and cream cheese, tofu, leftover pesto penne, President’s Choice Alphabet Pretzels, a Babybel cheese, Chobani in little dip cup, and a baked apple (recipe to come soon!)

I’m behind in reading (due to an error in bookmarking your site!) so I’m only just seeing this post. Have to say, my wafflemaker takes up little space (Salton brand Belgian Waffle Maker) and the difference in taste is well worth the risk!!! You’ll probably never buy another frozen imitation waffle again! (You can make a batch or two ahead, and freeze these for convenience 🙂 )
